Creamy pasta with sun-dried tomatoes and spinach
If you want to please your loved ones with a delicious and at the same time simple dish - this recipe is what you are looking for. The combination of flavored sun-dried tomatoes, aromatic Italian herbs and tender spinach in a rich “creamy” sauce will leave no one indifferent.
- — Pasta - 250 g.;
- — Sun-dried tomatoes - 90 g.;
- — Cashew paste - 3 tbsp.;
- — Tomato paste - 2 tbsp,;
- — Nemoloko oat classic extralight - 250 ml.;
- — Garlic - 3 cloves;
- — Spinach - large bunch;
- — Black pepper - 1/2 tsp.;
- — Italian herbs - 1/2 tbsp.;
- — Sugar - 1 tbsp.;
- — Cheese - 30 g. * optional*;
- — Salt to taste.
Method of preparation
To start, boil the pasta in lightly salted water adding vegetable oil, drain according to the instructions on the package, and place aside.
Let's move on to the sauce cooking. Fry the garlic in a small amount of vegetable oil until it has a characteristic bright aroma.
Add the dried tomatoes, stir and fry for another 2-3 minutes.
After this time, add the tomato paste and fry together for 3 minutes.
Next step, add the Nemoloko oat, stir well and simmer for 2 minutes over medium heat. Add the cashew paste, cook, stirring, until it is completely dissolved, if necessary, add more Nemoloko.
Send the spinach to the sauce, stir and slightly boil the sauce for 4-5 minutes.
Add spices and salt to taste, mix well.
The final step is to add the finished pasta to the sauce and mix.
Serve creamy pasta with spinach and sun-dried tomatoes, garnish with herbs and cherry tomatoes, sprinkle with vegan cheese.
